I recommend going with Rainbow Reef Dive Center. They have a solid operation and include a guide with all of their dives. I have been diving with them since 2010 and did my DM and IDC with them and worked on their boats. For sites, anywhere along the reef that you go will be great. If you want to get into the wrecks, the Speigel Grove is an old USCG hovercraft ship that makes for an awesome dive with plenty of life and always having something new to see. There are also the twin wrecks on the Bibb and the Duane. Those are harder to get to due to the current activity, but when it is calm, they are worth going to.

The currents out by the deep wrecks are unpredictable and can start moving fast in a short time, so if you have a chance to dive it and there is a window, you should take it. They usually ask for proof (logbook) that you are capable of handling the dives on the Bibb and Duane since they are more advanced then the Spiegel Grove.

What sort of experience would one need to be able to do that?

Also, sounds like the weather down there is rather unpredictable. If I wanted to do a long weekend of diving, I'd need a few extra days on each end then?

Me and my GF do a little bit of diving. We've only done the Open Water accreditation as far as PADI goes.

Mostly dive around Malta. Gonna be doing some in Thailand, Bali and Oz this year though

Probably, lol. Just went back today to test out the new XDeep Stealth 2.0 Tec harness I got last week. Still have some tweaks but I'm hoping I can be full cave by the end of February at this rate.
