Since I don't think anyone has contributed to the thread yet, I'll go first with a easy one.
This one is simple, a meatless sandwich. What I make mine with-
Whole grain bread
Lettuce
Pepper Jack cheese
Tomatoes
Cucumbers
Mayo
and if I have any, that phony baloney stuff
I usually it this with some nuts and soy milk with some sort of protein stuff I put in it.

I found an amazing recipe for Mediterranean Portabello Mushroom Burgers and have made it many times. It requires feta cheese, baby greens, olive oil, sourdough bread, etc.
I will try to have my mom email me the recipe so I can post it for you guys. Very easy and very tasty, even for those who are not vegetarians.

Im not a vegetarian but my friend is and he always tries to get me to eat some of the things.
Morning Star stuff is amazing though, I prefer it over the meat-crap.

I've turned vegetarian because my stomach really just doesn't like digesting meat very well. It's been a great decision, and I feel fantastic all the time.
Generally I eat a lot of burritos, thai food, indian food, and whatever other meatless ethnic food I can find.

Takes too much work to be vegan, though.

When I first decided to become vegetarian I would live off of Thai food and burritos. It was good but it was pretty unhealthy, oddly enough I eat a lot healthier now that I stopped being a vegetarian. I would also get Subways veggie delight, god damnit I want one now

for me it went like this
omnivore-->pescatarian-->vegan-->ovo-lacto vegetarian
when i moved out of the house i just couldn't afford to be so strict with my diet...thats how dairy and eggs found their way back into my life

I really need to get on with snacking on fruits and veggies more. Right now, I usually go half the day without eating, then I'll eat something large. It's killer on my metabolism.

what do you personally count as meat though? I know some people that still eat fish, some that are more strict about it and wont eat fish or eggs, and some that still eat beans. So I guess fish, eggs, and beans are kind of on the border?

I could never be a real vegitarian. But i do want to try some recipies. The only meat i wont eat is fish because i vomit after i eat it.
