Let's share our favorite paintball scenarios.

I'll start with our "zombie" scenario:
What we do when we want to involve a zombie scenario is split all the players in 3 teams: Military, survivors and zombies. Teams could look like this:
Survivors start at a point of the field that is easy to defend (a castle, or something like that).
Their mission is to pickup red 20gal gerrycan of "gas" (If your players are adults, fill the canisters with water for an extra challenge)
They also have to "defend" the castle from the military, who will try to blow it up using a prop bomb.
Military start at the opposite end of the field. Their mission is to eliminate everything that's alive (zombies and survivors). They also have to blow up the survivors' castle/spawnpoint by attaching a prop bomb to its one of the walls.
Zombies are provided with extra padding. They don't have any weapons. They are free to roam the field and are looking for easy kills. To kill a player, zombies have to get in a 10ft range and yell "FREEZE" (this way you avoid player-to-player physical contact, which can be an issue with insurance).
Zombies can die from either an headshot or when they decide that they had enough body shot. When a zombie die, he falls to the ground.
Zombies can feign death by lying down on the ground. They can't be shot when they are down. When they spot an easy kill, they get up and freeze the player. Zombies don't "die". When they get shot, they fall to the ground and wait for a minute or so, reanimate and wait for another player to pass by. I suggest using staff members or trusted players as zombie.
Zombies can roam the field. When they found a good spot, they fall to the ground and wait. When no players are nearby, they can get up and move to another spot. They can only be shot when they are walking or running. They have unlimited lives.
Both team get respawn. They each have 20 minutes to complete the objectives.
The game will be mostly military VS survivors. The zombies just add some challenge. You are playing and you see a zombie on the ground. You have to complete the objectives while keeping an eye on the zombie, because he can wake up at any time and get you ! Zombies especially like easy targets like players who are reloading, runs out of paint, have gun issues or are just distracted.
This game sounds complicated, but if you have good zombies (staff members, trusted players, etc) it's quite awesome !
