I see far more LS swaps in chevy/RX's/miata's than anything else at the track.
Sure you can make huge numbers with a 350 easy. You're also adding hundreds of pounds with an absurd cast iron block.
Fast car has more to it than just HP/Tq numbers.
not to mention, smog laws and overall efficiency.

The LS is attractive because, though its more expensive for parts over a gen 1&2, getting over 550hp and 20+mpg at the same time is easy. Bolt a carb on it and instantly add 20hp or more though

if you are swapping an old car, a custom built top of the line 1000 dollar carb will work very well. it will cost you 5k to put even a marginal EFI system on those cars, and 8-10k for top of the line stuff.

Wouldn't you still need to upgrade the fuel lines and fuel pump and **** or no ?
