I was looking into buying a new jersey/pant but everything have way too much padding and felt cumbersome.

The last time I was actively playing was in 2007 and bought my Empire jersey and Proto pant in ~2006. They had zero padding except for the pant crotch area.

Is this the trend we'll continue to see? More and more padding on them. If you don't want padding it'll cost extra... Sense this make NONE!

There are plenty of brands that do only small amounts of padding.
Especially their lower end designs.

Many of the mil-sim jersey and pants have little padding to allow for more mobility and layering.
Find a store near you that offers a great selection that you can check out.
