My field is BYOP. If I don't get Nightmare or JT Elite from Walmart, I have the JT Entry level paint at $80 a case at the field. I know that you might hate Walmart, but I'd guess that some fields buy their paint there an resell it at a higher price to me.
We all know the margin on paint is over 40% so they make the most on that to begin with. Places that have high overhead costs have field paint only policies. However most of them don't have established business and have taken out loans to startup.
Where I play, Urban Assault, has been in business for well over (or close to) 2 decades and makes eccanomic sense to me at less than 10 inutes away. They have 6 outdoor fields and 1 (soon to be 2) indoor fields for $35 with all day air. They make money or they wouldn't be in business this long (I assume).
What paintball fields is players to come play. If 6 to 10 people come a day, it's not going to cut it. If they get 50 to 40 players a day, then they get by. Owning a field isn't going to get you rich. Paintball is a money pit and no matter what, most fields will go under. Unless you play regularly at a field, it's not going to succed.
Play 2 to 4 times a month and that will help your field stay open. Tip your refs, be respectful and a good member of your field, help the noobs that are first time players to have a good time, don't light up someone with 3 shots when one will do, help keep the game moving so it's more time playing and not waiting. That's more important than buying field paint.
