Some better pedestrian interaction would be kinda cool imo. Maybe also have a type of office building that you can actually walk around in with people working. Or be able to hide from cops in a building like a mall?

Yeah I've always hated textured doors with nothing behind them. At least in GTA IV you had the projects to hide in.

Itd be cool if they did something where if you broke a law, like a minor one. They actually threw you in jail for like a night and you had to deal with the other people in the cell. Or like if you have enough cash, you can bribe officers to get out.

thats how you get out when they bust you for wanted level lol. it would be cool but it would make the game wayy less fun. like Driver 3 if you ran a red light, you got a wanted level...not fun at all

I want to be able to customize the look of my guy.

Nothing crazy, but just the physical features. I hated playing as a fat Russian guy in GTA4. Although I think that Niko loses weight during the game.
