I'm thinking about downloading teh 1.8 beta files, and running the server prematurely. Just because I'm getting impatient.

Only way you can "keep" animals per say is if you catch them and leave your person afk by them otherwise they despawn.
2nd opotion. use admin give self a mob spawner and set to spawn whatever you want. And whenever you come near it. Animal of choice will spawn. But if you are not near will despawn.
Same way that growing works only grows when you are online.
Does anyone else feel like starting a new multiplayer world? I like that feeling you get when you first log in and you have no idea what you're going to do.

In 1.8 animals do not despawn or even spawn at all after the chunk got created.
I have 1.8 pre-release server files running right now, had to create a new world, but I backed up the old one.

Just copy the minecraft.jar file to the .minecraft/bin folder or whatever. That's what I did.
