find good restaurants and eat at them and note what things taste like

for dishes like chana masala and dal curries and lots of other indian jawns, cook the **** out of your onions first. Gotta put the time into it, but it's worth it.

Grab a cookbook or better yet, find a local Indian/Thai/Middle Eastern food store. I love going into my local Indian store and chatting up the family that owns it. I've been cooking Indian food for about a year and a half now and am totally obsessed. My spice rack has grown 10 fold lol. Be prepared to fill entire drawers with bags of corriander seed, cumin, cardamom pods, dried chilis, mustard seeds, bay leaves, garam masala, anise, asafoetida, nigella, and etc. I love finding new spices and building really complex flavored curries with them. It's a lot more fun than cooking classical that's for sure. I'd be psyched to apprentice under an Indian chef after I get out of the Navy if culinary school isn't an option and start my career that way.

Had a hankering for breakfast so I whipped up some eggs with shredded cheddar cheese and tater tots (turned out to be an omelet type thing) Along with 7 pieces of bacon and 2 pieces of buttered white toast. Was easy and good.
