Id say make a list of things as you think of them.check em off as you add it to the pile to be packed up.. before packing lay it all out in an orderly way and check the list off again.never hurts to tripple check everything.

TONS OF WATER if not for yourself its always nice to have some handy incase its needed to help out someone else.. (they would do it for you) just a few cases from walmart run about 3 a case..
Extra clothing,socks,undies shirts,pants,shorts ect get a few of the gallon freezer bags and put the extra clothing in them so if it rains they stay dry and clean, as well as a few extra bags to place your dirty stinky gear in so not to smell up the car
extra marker or two
snacks,granola and such,dried goods that keep and dont need heating.
you get the idea..
the night before you leave lay everything out on the floor and look over it a few times to make sure not to forget anything. pack it up and you should be good to go.
