Hamburgers. Homemade, not the fast food.

Who here knows how to make a sick burger? I love those. They are in my top 5 favorites for any kind of food. My dad grilled some mean ones, but they were always normal burgers. I haven't had any "homemade" gourmet burgers before. I have had a few at restaurants, but I need some good recipes so I can make some of my own. I found these special hamburger recipes, and they look good. Has anyone tried any of those kinds? What would be the best kind to try. It doesn't have to be easy to make, just good. Of course, I am no pro chef, so they need to be doable. But I am an adequate cook.

I've been mixing in one egg for every pound of meat. It holds together so much better on the grill and u cant taste the egg at all. Anyone else a fan of this??

Yeah, it only makes it worse when they're ball shaped, harder to eat as well as cook.

My dad's friend used to make the best burgers, I know he put minced onions in them as well as probably an egg and onion powder. They were really damn good.

Usually I keep the burger plain, but if I feel up to it, I mince an onion and add some salt and pepper. That's about as "elegant" as I go for burgers.

Mix in: Brown sugar, Bleu Cheese, and Bacon(I cook the bacon first)
Cook medium Rare.

ground beef, onions, egg, bleu cheese, and cut up ham (yes, i said ham). mix it all together, make patties, toss on grill and cook to your liking. soooo good. brown sugar in the burgers is great too

depends on the type/shape of bread the burger is going on and other things...

thicker burger = more character to meat. Charred outside with gradient to nice moist middle.

Old Bay seasoning
Chopped onion
Minced garlic
Worst' sauce
Frosted Mini-Wheats

Sounds strange, but I use the cereal as the binder, rather than bread crumbs. Adds a nice sweetness to the background.

My other one (my favorite!) is:

1 pound lean ground beef
1 pound lean ground lamb
1 onion, grated
4 cloves garlic, pressed
2 slice bread, toasted and crumbled
1 teaspoon dried savory
1 teaspoon ground allspice
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon ground black pepper
2 dash ground cumin

Make the patties, cook to desired doneness, top with Feta cheese a few minutes before done.

Sliced onion, cucumber and tomato, if desired.

And because ketchup is for Whoppers...

2 (8 ounce) containers plain yogurt
2 cucumbers - peeled, seeded and diced
2 tablespoons olive oil
1/2 lemon, juiced
salt and pepper to taste
1 tablespoon chopped fresh dill
3 cloves garlic, peeled

Toss that stuff in a bowl, give it a good stir, and you've got some kick-arse tzatziki sauce!

Egg is for scrubs.

Protip:
Make your patties the night before. Leave them in fridge overnight, then they won't fall apart on the grill.

I am impressed ST:Food. Usually no one ever mentions bleu cheese in burger threads. And you're all spelling it right as well

Quick One:
Ground Chuck
Pound of bacon
Bleu Cheese crumble & dressing
Cajun seasoning


Get some ground chuck, get some ****in bacon. Bake some of your bacon in the oven seasoning with cajun. Cut up bacon. Mix bacon and cajun seasoning into the meat. If you wish you can add bleu cheese crumble to the middle of the burger.

Throw them bastards on the grill/pan along with some more bacon. When near done take burger off grill/pan. Put on bacon, some bleu cheese crumble along with a bit of dressing, and cajun seasoning. Cook in the oven for a bit. You want the cheese to kinda 'crust' and brown.

Get a good toasted bun and enjoy.

Grind your own meat and try mixing different cuts together.

I normally go down to publix and buy a pound or two of whatever steak cut is on sale and grind it down, looking for the peices with more fat then others.

Then mix in some garlic, old bay seasoning, and Penzy's Spices seasoned salt.

The flavor of the best burgers comes from the meat, not the spices. Your choice in meat (whether it's a fine cut of beef, or exotic meats like shrimp, fish, turkey, etc.). Also, try to use a good cheese and not that processed crap.
