Lets talk: Meat Sauces

I'm a huge fan of bbq sauces, etc and love trying new ones. Post your fav's


Steak: A1 nothing comes close

Chicken/Pork: Heinz 57

BBQ: KC Masterpiece but in NC theres a wide variety of local thinner vinegar based sauces that are AMAZING

What are your favorites? Post any special recipes you might have,etc

Syrian Lamb Sauce

take 1 head of fresh garlic, half cup banana peppers, half cup of canned chickpeas, half cup unflavored yogurt or sour cream if you cant find the yogurt, 2 or 3 green onions depending on the size, quarter cup of olive oil.

Start by blending the garlic, peppers, yogurt, chickpeas, and the white parts of the onion.
Stream in the olive oil to emulsify, add salt and pepper to taste.
Finely chop the green part and top the sauce with that, serve with any kind of grilled meat and flatbread such as pita, lavash or kmaj.

This dipping sauce and serving style especially works well with kebab style meat cooking. Take your sauce, apply it to the flat bread and wrap it around the kebab skewer and all.

good steak doesn't need any a1 dude what the **** are you smoking

if you're going to make a sauce for a steak do something strong and use it minimally...like for a Strip, maybe a balsamic reduction with some beef stock and whole butter along with a handful of mushrooms for a simple concentrated sauce that you can use sparingly

I have some friends who say that as well. Personally, I just love A1 on all steaks, I ****ing drown my steak in it. Even ones with quality seasoning I don't like without A1. I eat a few pieces without it, but it just makes me appreciate the A1 even more.

why don't we ask somebody who actually has a clue what they're talking about when it comes to food

maybe somebody who has worked in the industry for close to half of their life?

Again, everyone has different tastes. It doesn't matter how long you have been around food, everyone likes different things. Just because you think A1 kills steak, many other people dislike steak without it. It really is not that hard to understand, but I know you will continue to think you are better then others because you eat steak without A1.

IMO a good steak is ruined by A1. But there are plenty of weirdos that put ketchup on everything as well, why should steak sauce be any different?

all I'm saying is, if one of you comes to my restaurant and orders a steak, then ask me for A1, I'll go find a bottle and break it over your head, then make you pay with a 40% tip and kick you out

Now as far as BBQ, Head Country is the best.

^THIS. I can understand if you're putting A1 on a piece of steak that's been chillin in your parents freezer for 2 months, tossed on to the grill still frozen inside and cooked to medium well or well. Honestly though, I won't cook/eat a steak that wasn't fresh from the butcher.
