If, by "updating," you mean you'd like to be able to put music on it and take it off, you can check out gtkpod if your iPod is found in the following compatibility list: http://gtkpod.wikispaces.com/Supported+iPods
I think the Amarok media player supports iPods as well.

It sounds like your Touch has to be Jailbroken to transfer music in Amarok. In my experience Amarok is as close as you're getting to iTunes. I haven't used iTunes through Wine but I wouldn't recommend it to even my worst enemies.
