Mostly because MySQL doesn't have decent support for replication much less clustering. Furthermore, even if we could run a master-master or group of slaves, we can't really afford to have a ton of slaves hanging around when a single machine can handle the load.
Sure, there's a single point of failure, but we have 2 hour hardware replacement, it's not going to be the end of the world if we have to take the site down for a bit to swap out something that fails.
