One of the best tastes I found on accident. My dad was making home made beef jerkey and I got a piece that wasn't fully cooked, and it was pretty damn good. The marinade is 1 part soy sauce to 1 part lemon juice, it sounds terrible but it kicks ***. I put thinly sliced steak into the marinade and let it sit for over 6 hours, and the acids partially cooked the meat and it was EXCELLENT.

EDIT: And I completely forgot- Vegas actually does have some pretty good sushi. My dad and I had sushi twice out there- once in the lobby of the Stratosphere, and the other at the Bellagio's 5 star dinner buffet.

I am addicted to Sushi. I have it about 2 times a week. I have just about everything, but my favorite sushi is salmon, white tuna and tuna. Unlike some of the snobs in here:

I don't really care if you eat a roll, sushi, or sashimi its all raw fish and its all delicious. Even veggie rolls are cool.

I live in Toronto so there are a ton of sushi places. I have 4 within 2 miles of me, but I usually go to the smaller average priced place. I usually get a small sushi tray for myself. It's $37 CDN and it comes with:

-6 pieces of salmon sushi
-3 pieces of tuna sushi
-3 pieces of crab sushi
-3 pieces of shrimp sushi
-3 pieces of snapper sushi
-6 pcs California roll
-6 pcs spicy salmon roll
-8 pcs of rainbow roll (cali roll with all kinda of fish spread out on top)

Although I will say the best is the "Crazy Sushi" franchise in Toronto. They have some of the best rolls I have ever seen. My fave's are:

-Tex-Mex roll ( fresh tuna sashimi, diced tomatoes, avocado chunks
& masago, tossed in a light spicy cream sauce &
scattered over our classic California Rolls)
-Big House roll (a true “futo maki” stuffed with tempura-fried spicy minced tuna, fresh avocado, crisp cucumber & crabstick, topped with strips of fresh salmon sashimi )
-Salmon scallop roll (fresh sea scallops, scallions & masago infused with soy-sesame oil, rolled & topped with strips of fresh salmon sashimi & garnished with avocado & toasted nori)
-Great Canadian Roll ( fresh, succulent Nova Scotia lobster rolled with crisp asparagus, a lightly spiced Japanese mayonnaise & topped with a delicately cured, Atlantic smoked salmon)

Although some aren't really sushi, they are ****ing amazing. The rolls listed are ****ing huge and cost at least $10 each, with the great Canadian costing $16. Basically, I fiend for the stuff in all its forms. Sushi is the greatest. End of story.

I'm also surprised at the lack of places in the U.S. You guys seem to have a shortage down there.

I've tried before. It's never the same. Figures, real sushi chef training takes years.

I tried making salmon and tuna nigiri. They looked like crap and I was concerned that I was going to make myself sick.

Getting the right balance of sugar to vinegar for the rice was tricky for me.

Exactly. People think making sushi is easy, it really isn't. I like paying for it and keeping it as a reward. I love my sushi and would not want to eat a lesser quality version of it.

that likely has to do with the cheap source of fresh fish.

Blue Water Cafe/Raw Bar:

http://www.bluewatercafe.net/

which are wayyy up in the top ranked sushi spots in all of north america, Blue waters Sashimi starts at $8 a peice per for sashimi

after all these high end place i can definately appreciate the absolute freshness and quality they serve, but for the price it's too much to frequent, another place I go at least once a week is called Akasaka has amazing quality for the price, some pics:

a couple in-house specialty rolls pictured there, Washington roll with the Salmon overtop of a Cali roll, Crispy roll which is a double Dynamite roll [2X tempura prawns inside] covered in a crispy layer of tempura batter sprinked on top, and the Tiger roll, which is amazing and has a variety inside the roll, then Ebi on top with a slice of Avacado under it, heaven baby!

I'll continue to update this with pics as like i said, i eat jap food minimum 1 time a week, and almost always have my cam, so if i find some crazy rolls at different places i'll snap some pics and share

anyone got any of their own to share?
I swear I cried when I saw those pictures that is beautiful

Every sushi chef in Vancouver makes at LEAST $18/hour even at the ****tier establishments, that kind of goes to show the skill needed to make even lower-end stuff

when you get into the high end cuts of anything your going to pay a premium,

Anyone ever had Fugu? one of only 4 chefs in north america fully liscenced to serve Fugu is here in Vancouver but i've yet to try it

I wouldn't take the risk.

But yeah, sushi chef's are paid nicely here in Toronto too. Its well worth paying the premium...like most other things in life.

Chrisfromnj helped look for balloons
w00t sushi.

big fan of softshell crab rolls, shrimp tempura, spicy tuna, and boston roll.

I have been to Nobu NY in the city a few times, sort of expensive but really good.

There is this small chinese/japanese place near my hometown that is surprisingly really good and fresh, not to mention cheap. By school there is another really good place, that is very fresh and pretty cheap.

My school started having a sushi bar a few years ago, at first it was just a lady who pre-made everything. Now we have a team of 4 people that make everything fresh right there. IMO they are a little expensive to be on a college campus and really arn't that good. Plus when i ordered a boston roll they forgot the lettuce

Fugu is my unicorn, so to speak. I'm working on an "exchange teacher" program to Japan more to learn how to make it properly (or as best I can in the time provided) than I am to teach the sons and daughters of businessmen to speak fluent English.
