I can not seem to ever hold a 1680x1050 resolution with Windows 7. I have a Westinghouse 22" widescreen LCD, it's worked with 1680x1050 before in XP and briefly during Windows 7. I don't know why it changed, but I no longer even see 1680x1050 as an option in either Windows display menu or in CCC(Catalyst Control Center). I have a ATI 4670 video card.
Had this problem with Windows 7 64 bit RC 7100, and also now have it with Windows 7 Professional 64bit. This is the RTM, and a legit version.
I have updated drivers for my video card for Windows 7 64bit.

Don't use the auto-update method for drivers. Go straight to www.ati.com and get the current drivers from there. Unload your old ones. reboot. Install the new ones. Reboot. Profit.
WinUpdate only shows you the latest "Microsoft Approved". Not the latest drivers from ATI.

Did that, with just the display driver and not CCC, no difference. Still can't get 1680x1050.
Closest options it gives me are 1440x900 and 1600x1200.
Also, with 1440x900, when I select it and apply that resolution, my monitor says Out Of Range. then returns to the previous resolution.
I assume 1440x900 is a widescreen resolution and would work on this monitor?

two things..one google your monitor info and see what video res it supports. not all monitor are made the same. on fixing our problem have you gone into windows display settings there a check mark that says hide all setting my monitor cant handle and uncheck it. windows xp/vista/7 will day loaded drivers for xx monitor but then turn around and use a generic plug and play monitor.
