Would you guys say it's better to use risers or just harder bushings to avoid getting wheelbite? This is in the context of freeriding.

Risers.

I ride with 1/4" risers so that I can still keep my trucks to the looseness that I like and not get any wheel bite.

The order in which you should go about solving wheelbite (that feels best)
1) add bigger wheel wells if possible
2) adjust bushings
3) add cup washers
4) add riser

small amounts of riser is ok, but i'd rather not use any if possible.

Buy Butterballs! But don't listen to me, my opinion is biased because I work for Sector.

Are the current wheels you have center-set or side-set? Are your wheels broken in?

my sector 9 65mm 10a aren't fully broken in yet and they're centerset but my o-tang stims are broken in and they're side set

I recently ran over my Triple 8 helmet (on accident) and now I need a new one... but I can't decide if I should just get a Bell drop full face and wait off on getting another half lid, or vice versa... I occasionally do some dancing and other low-speed things, but I'm mostly working on freeriding and some downhill... what do you guys think?

P.s.
I'm currently using a motorcross/ATV helmet that seems to be a bit too uncomfortable, for lack of a better word.. So that's another uncertainty of mine.. should I eventually ditch this helmet for a better fitting full face?

Will you be riding down hills, or mostly flat ground tricks/commuting/cruising and stuff?

Get a bell drop for downhill, and then a half shell for the other stuff. Its never a good idea to skimp on helmets, they save your life.

Nice!! Glad to hear that you're better! My knee recently healed up after I fell on it a few weeks ago, so I'm pretty happy to be back on my board as well.

Which board(s) would you guys freeride but not downhill, and vice versa?

Meh. Forget about my last question... but I have another one....

So recently when I do some heelside speed checks they feel real choppy... and they didn't before. I'm riding 78a raceforms right now so I highly doubt it's the wheel's fault... My friend says leaning farther back will make the slide smoother. Is this true? Any insight on what it might be?

Its really hard to give you any sort of decent advice without seeing your technique haha. I'd make sure you arent just trying to force the check out, you really need to "sit in the chair" and move your hips, not your legs. Alot of people try to do heelside checks by just forcing the back of the board out, but thats not proper technique and is asking to hook up weird and highside.
