The best one to go to if you can is Hypersportz Paintball in Mount Uniacke. It's an hours drive from Truro, but it's where most people go from Halifax. Here's directions and that stuff:

Other one is Armyman's Paintball, speedball only, and I'm not sure if they're open in the winter (website's down). That's right in Truro.
Your nearest indoor field is almost 2 hours away at Storm Warning paintball in Kentville:
