I missed this post before, but I'm going to respond now since its still relevant. Anytime I book a client, whether I'm shooting paintball photos or a wedding video, I always state in my contract, or verbally, or through pm, that I get full creative choice in the way I shoot and edit. If my client doesn't like what I produce, then they probably won't like what I produce in the future, so return business is probably not going to happen/not something I care about. For the most part, my clients like my creative choice of shooting and editing, so I get return business or referrals from most of then.
In your situation, I would tell your client that selective coloring is not something that you do to your photos. You can explain to them that it's your photo, so you have the right to process it the way you see fit. They hired you based off of your previous work, which I assume has no selective coloring in it.

I have that in my contract, they just overlooked it. I had to enhance her eyes a bit to make them happy so they would quit hounding me over the selective coloring. It came out good and they liked her eyes.
And nope my work has none! They saw it on pinterest and wanted it... Dodged a bullet.

Stopped with Chris on the way back from WCPPL Vegas and shot this... I think he was mad that I didn't shoot some skate trick he wanted to do on a slide...
