Sanitize, and keep it airlocked. If you do that, you're at least going to get real alcohol. You could have had acetobacter growing in there, which would produce acetic acid from the ethanol. In other words, it's making vinegar.

It's a little sack meant for the grains. I'm steeping the grains in 155* water to extract all the fermentable sugars. The sock is there to keep the hulls out of my wort (the hot sugar water).
