You can look up the different characteristics of each. They're pretty well-documented online for the more popular sets.
I know you know wiring and circuits and stuff but I don't know how well-versed you are with amplification/sound stuffs.
Every time you half the impedance of a speaker, you double the amount of wattage that the amp will try to push through it (until the amp reaches its limits, or other bad things of the sort happen). So, theoretically, a set of 80ohm cans is getting almost 3 times the wattage from the same source as my 250ohm set would be getting. 32ohm versions are getting almost 4 times the wattage.
Personally, I'd suggest trying to find a place locally that you can try out some of the better stuff. I think some people were saying their local Guitar Centers had some pretty decent headphones to try. If you find a set that you find particularly comfortable and sound good, take note of it. Then look online for the different impedances and the characteristics of each and pick which one seems to suit you best.

They'll all sound better through a good DAC or amp but I'd assume they have some sources there that you can compare to at least. Or you could just walk in there with a laptop and DAC/amp and make them all feel like noobs

I was wearing my headphones staring at an article that I was reading. She walked in and I saw it from the corner of my eye. So I looked over, then looked back to the article and kept reading. Kept my headphones on until she removed them from my head after what was quite the awkward moment.

My lady friend asked me to be her roommate in Cali. I might do it. She said it would be like ~800/month to split an apartment 20 mins outside of SD, which sounds ridiculous to me. But I guess that's Cali...
