So maybe I'm just missing something but I cant seem to separate the bolt cap from the bolt, any advice?

There are a bunch of little set screws around the back of the bolt assembly where the back caps meets the bolt assembly. Unscrew all of the although I believe that the one for centering the bolt assembly can be left in (the one sticking out the most).

remove the screws and yank / twist hard
