The regular officials aren't perfect and make mistakes, but again...
The regular officials don't do things like walk off ten yards on a five yard false start penalty, they don't stop the game twice for two-minute warnings, they don't spot the ball incorrectly by three yards, they don't give a team five time-outs in a single half... I could go on, but you get the idea.
The regular officials aren't perfect, but they don't make glaring errors at the absolute basic level of the game.

They dont mistake heads and tails for the overtime coin flip... oh wait.
They dont get in the way of players and get trucked by Joe Horn... oh wait.
And that was all one referee.

Yes, the real refs will make mistakes. It's easy for us to criticize them when we have instant replay with multiple camera angles at our disposal while they see it once. And in the event that it is challenged, they will correct it and not hand over a W to the Seahawks when Tate clearly didn't have control of it.
They also know what the rules are and will make consistent calls on the field.

It was the regular review crew in the booth, and they could find no indisputable evidence to overturn the reception, so I guess its not as clear as you want it to be.
