It was all pretty much done in Camera RAW editor in Photoshop. I then did color correction to individual pieces in photoshop, along with an assortment of other typical adjustments I make.
As long as you get the entire image detail contained in your histogram, you have plenty of editing range to make changes like above.
Topaz Adjust is for poor people.

The birds were from a shot I took a few minutes earlier. They were flying against a white sky, so I made sure the birds were silhouetted, and then I just applied a Darken layer style to automatically remove the bright white sky. It didn't take much work at all.
