Are you just playing one day? Then it is probably hard to hit up both, unless you want to make a full day of it. If you only have time to play one field, here is a little about the facilities.
Paintball Addicts: The ground is quite hard. Not a bad thing, but definitely a knee-pad type field. If you want to watch games, Addicts has a fully netted area all the way down one of the sides of the field where you can see the games. There is also a huge area outside the field with tables and chairs if you want to bring in some grub while you hang out. As well as the sofa and foosball and TV for hanging out with the front office staff.
UXP: I like the turn a little more at UXP, not to mention, they are cleaning the floor this week, so it should be amazing by the weekend. They also built new start boxes that are exceptional. The staging area is more like a huge locker room (without lockers). Very open, benches to sit on and tall counter space for your gear. There are some TVs for viewing the games going on the field, but other than that, you can't see the field.
Both are great facilities. The airport (Provo Pick Up) field is also a fun one. It is normally free. It is a Community Hyperball field with full netting and normally BYOP. The field is on natural grass and sometimes dirt, depending on when you play it.
