They make sheets of CF that you can get off mcmaster and the like in thickness close to a trigger width. I have seen a few people make their own triggers and backplates with them before.
I think the problem with bonding several sheets together and then machining them would be cost. It could be done, but if you have a huge chunk of CF that you are going to make a body or frame out of, you are going to have to remove a whole lot of material to do so which would be pretty wasteful.
