How are the days split majors on Sunday minors on Saturday?

Minors will play on Saturday

How do the conferences work?

Are teams just signing up and you are going to choose their conference for them?

no - teams get to decide which conference they want to be in.

Without making it more complicated then it is - the conferences really are just two leagues (one at Fox 4 and one at Camelot) that are related in both format and finals - meaning the format of play and they best teams get together for finals to decide a champion.

Yes - the top teams from both leagues will play in the finals.
