Frostless Freezer

So over the past six months I've started to get really into cooking. I was watching some videos online about storing meet for long periods of time in the freezer and aging meat. I want to get a deep freezer so I can age meats and store meats/fruits/vegetables and not have to open and close the freezer which would spoil some meats if the temperature is changing constantly. One of the videos I was watching was saying frostless freezers are bad because the temperature goes up to melt away frost then goes back down again. So my question is how can I turn off the frostless feature on the fridge/freezer I have?

A new one, that pushes the cold air into the freezer is awesome. It doesn't need to "defrost" by changing the temperature, but it just stays defrosted thru constant air flow.
