WAYMT: What Are You Making Today

Food section is completely dead. Here's a thread to just post what homemade meals you are preparing today(or have done this past week). Include recipes if you wish. Just a thread to keep food conversation going and to possibly use for inspiration.


Although it wasn't today, this past weekend my friends and i had great weather and wanted to grill. one day we grilled pork chops, toasted garlic rosemary ciabatta bread, and made potato salad. the second day we grilled honey dijon glazed chicken breasts and asparagus. mmmmm.

that pasta alla norma sounds good. thats what i love about italian food sometimes is the simplicity of recipes but using really great ingredients. when produce is really fresh i like to make ratatouille. even though it is only vegetables i find it very hearty.

I am making the alla norma because my house mate brought home a good looking white eggplant. Should be enough to feed six. I also have 6 or so basil plants in the back dying to be used. Simple yet good. Can't wait.

I've got a second batch of homemade pizza dough and homemade tomato sauce in the fridge. So probably pizza.

reminds me, i did a greek flatbread with pizza dough. used hummus as the sauce, put on ground pork, kalamata olives, feta, and mozzarella.

That sounds awesome.

Today I'm working on wheat bread. 2 big loaves for the next two weeks. Also homemade peanut butter.

Tandori chicken for dinner. Its so much easier to cook with 2 people. I waste less food, it costs less, we move faster, less things go bad, and it just goes faster. I'm glad my gf is into cooking or I would never do any of this ****.

last night i made some homemade sandwiches that where awesome. I roasted a pork tinderloin for about an hour then cut it really thin. Toasted some hoggies, put the thin pork on, grilled onions, fresh provolone cheese, some steak fries on the side and homemade Au Jus to dip it in.

Last night I made skate wing scampi. I got some clear nosed skate for free from my local fish guy so that was cool. It's good **** too, just gotta make sure you put another lightly oiled pan over it while it's searing to keep the sides from curling up.

rogue, how do you like sardines? ive never had them but most people i know(with a good palate, not my college buddies) seem to enjoy the oily fish accompanied with a lighter side, much as how you did with the light pasta and vegetables.

Wouldn't eat them if I didn't like them.

Good sardines (brisling particularly) are great. Unfortunately, most of my experience is with the canned variety...but they can still be very good.

Very easy and healthy, too.

I actually picked up some Brislings recently. I'm waiting to use them until avocados go again sale again. There was a great recipe from the food network I wanted to try.

it's hardly a recipe, if it's what I'm thinking he's talking about.

mash up some avocado, marinate some sardines in a vinaigrette, put them on toast.

Also, I'm in the middle of moving stuff from my apartment into a storage unit and want to shoot myself.

Beef ribs(~7 hours, be patient!):

1 Rack beef ribs
Olive oil
1 Dry rub, whatever you like.
2 beers or 1 bomber of your choice, I use west coast style IPA's
1 Bottle bbq sauce, I've been trying all kinds. I buy thick sauces to thin with beer, and shoot for sweet/hot/mesquite/smokey flavored sauces.
1 bulb of garlic
1 tbsp: oregano, thyme, rosemary, cumin, mustard seed, whatever floats your boat.
1 extra tbsp dry rub.

Sauce:
Add sauce, beers, spices, and dry rub to a medium, thick bottomed, sauce pan. Heat to simmer and add beer as necessary to keep your desired consistency. The idea is to cook it down, so a thin sauce is nothing to worry about at the start... you'll have time.

In a small remican(little oven save ceramic soufle dish). Cover the bulb of garlic in oil, add some herbs and put it in the oven. Cook it right along with the meat and add it to the sauce just prior to saucing the ribs. It should cook for at least four hours. Just squeeze out the garlic mush and mash it with a spoon or the flat of your knife on a cutting board.

Ribs:

Heat oven to 220ºF
Cut rack into individual ribs
Boil for 45sec-1min
dry them off, apply dry rub and use the olive oil on the exposed sections of marrow. This is an important step.
Place ribs into oven safe dish, arches up.
Bake for 4-5 hours @ 220º or until you're satisfied. The longer the better, don't skimp.

After five hours, Apply sauce, cook one hour, sauce, hour, sauce, hour. Until your run out. Using one bottle I usually only get two coats on, but you might have more.

Once I'm satisfied, or hungry enough not to care anymore, I'll kick on the broiler for about five minutes or just until the bbq sauce starts to bubble on the ribs and caramelize.

Then it's OM NOM NOM MOTHER****ER! They might take all day, but you'll be glad you did it. You'll probably be better off with two racks, because who can't eat a stupid amount of rib meat?

What a great idea for a thread. I'll try to remember to post in here when I make something delicious/interesting.
