Sounds good. I'm expecting my BBT Sovereign shortly so I think this is a good idea. :)

How much does a BBT Sovereign usually go for (I know that prices can really jump with some custom mill work)

Well I don't believe they make them anymore. But they might start doing custom work for the Sovereign IIs at some point, but I wouldn't count on it. I got mine used, for a great price.
